    • Borgo Egnazia was built entirely of rough limestone and local stones cut by the skilled hands of stone masters. Artist and designer Pino Brescia was inspired by the simplicity of Puglia’s ancient farmhouses and rural villages. It is a contemporary interpretation of Apulian architecture, providing three kinds of accommodation, different in scope and size, but all conceived as an harmonious blend of tradition and innovation, modernity and authenticity, grandeur and simplicity.

La Corte is the traditional main building, with 63 rooms divided into different types. The famous Borgo is at the heart of the property with its entrance arches, narrow streets with Apulian names, the bustling square, fountains and the iconic clock tower. Here there are 92 different types of houses, and finally there are 29 villas with private gardens and pools that are perfect for families and for those who want absolute privacy.

      La Corte (63 rooms)

La Corte is the main central building that hosts many of Borgo Egnazia’s facilities, such as Due Camini restaurant and the spa. All six serve dishes linked by their local Puglian heritage, created by the Executive Chef Domingo Schingaro under the supervision of consultant turned Michelin star chef Andrea Ribaldone. Dishes are made with the best locally-sourced ingredients such as tasty Regina tomatoes, the finest olive oil produced from olive groves on-site, home-grown aubergines, and peppers, freshly-caught fish and the best local meat. Simple ingredients are transformed in a surprising way in the menu of Due Camini gourmet restaurant where Chef Schingaro takes inspiration from his youth in Puglia, bringing back to life neglected flavours. The same raw ingredients are also found in some of the more rustic, traditional Mediterranean dishes served at La Frasca restaurant, the Pescheria Da Vito in Cala Masciola and Trattoria Mia Cucina. This last restaurant in particular is where each week Puglian cookery lessons are held alongside ‘Mimina’s Dinners’, where the cook from the Melpignano’s family home prepares dishes in front of guests, teaching classic recipes such as “orecchiette with cime di rapa” (or turnip tops), as well as meatballs in tomato. Even the wine list at Borgo Egnazia is of the highest level featuring 600 selected labels, 450 of which are from Puglia.
